Juicy meatloaf filled with spinach, ham, eggs and cheese, coated in breadcrumbs.
Ingredients: beef, egg, bread, milk, Parmigiano Reggiano, ham, spinach, cheese, salt, pepper.
Allergens: gluten, egg, dairy.
Heating instructions: Preheat fan oven to 150°C (not higher). Keep in the aluminium tray. Add 2 tablespoons of water or stock around the sides, then cover tightly with foil. Heat for 30 to 40 minutes. Rest covered for 5 minutes, then slice and serve. Important: heating slowly and covered keeps it juicy. Overheating will dry it out. Do not reheat more than once.
Storage: keep refrigerated at 0-5°C. Best reheated on day of collection. Use within 3 days.

This meatloaf was delicious! My children really enjoyed it, which was surprising as I thought they would balk at the thought of egg and meat together all rolled up. My son even had a second helping. The guests at our dinner party were impressed the egg in the centre was well placed and it almost looked like it continued on and on - a work of art!
